Kochi lies in southern Shikoku, facing the Pacific. Known as the birthplace of the late-Edo patriot Sakamoto Ryoma, it still celebrates him as a local hero. Kochi's signature "katsuo no tataki" is bonito seared over a straw flame for a smoky aroma. Typically eaten with salt and plenty of condiments, it is a flagship taste of Tosa that carries on the bold food culture of its fishermen.
